Sweet Potato Brownies with peanut butter sauce

 

Ingredients:

  • 1 large cooked sweet potato

  • ½ C melted dark chocolate

  • 1/3 C plant based milk

  • ½ C flour

  • 1 TBSP baking powder

Topping:

  • 3 TBSP creamy peanut butter

  • 2 TBSP maple syrup

  • 1-2 TBSP water

 

Process:

  • Steam the sweet potato in your Instant Pot – 15 mins on high pressure. You can also bake your potato for 1 hour at 350F.

  • In a mixing bowl, combine your sweet potato with the melted dark chocolate.

  • Add in the other ingredients and mix everything together.

  • Cook brownie for 20 minutes at 350F. Remove & let cool.

  • Mix peanut butter topping ingredients together. Microwave peanut butter to soften, if necessary. Pour over your brownies & enjoy!
