Sweet Potato Brownies with peanut butter sauce
Ingredients:
1 large cooked sweet potato
½ C melted dark chocolate
1/3 C plant based milk
½ C flour
1 TBSP baking powder
Topping:
3 TBSP creamy peanut butter
2 TBSP maple syrup
1-2 TBSP water
Process:
Steam the sweet potato in your Instant Pot – 15 mins on high pressure. You can also bake your potato for 1 hour at 350F.
In a mixing bowl, combine your sweet potato with the melted dark chocolate.
Add in the other ingredients and mix everything together.
Cook brownie for 20 minutes at 350F. Remove & let cool.
Mix peanut butter topping ingredients together. Microwave peanut butter to soften, if necessary. Pour over your brownies & enjoy!
